There is nothing more special at this point in life than good friends and a good pie, and even better when they can be enjoyed at the same time. This group of good friends, all nurses, has met every year for the last 30 plus years to enjoy a Christmas lunch and gift exchange. Now that we are retired, we also are meeting for lunch several times a year.

Places: For this luncheon we decided to try a new restaurant that is conducive to friendship and fine dining. We started our meal, as we always do, by catching up with our lives….an artist with two watercolors in an exhibit at a local art museum, a movie review, an alert about an upcoming concert, and updates of our vacation plans. After a tasty main course, we abandoned our diets and decided to order the featured pie.

People: Chef Jason. Jason is the hero of this story. When our server placed the dessert order with Jason, she told him that we wanted to split two pies to share. Chef was concerned and offered to tell us how to share the pies so we could properly enjoy them. Immediately, he came to our table and suggested that we leave the pies on their plates and, rather than cutting them to put on five plates, to instead, dip our fork into the pie for each bite so we did not ruin the perfect shape and construction of the pie.

Pies: Coconut Cream Pie. As you can see, this pie (intended to be eaten by just one person!) is delicate and frothy with whipped cream and carefully balanced on a graham cracker crust. We took great care and proceeded to use our forks to savor each bite while keeping the pie intact! We immediately made reservations to return to this restaurant in a few months!
