Several years ago, when a friend asked me to go to Pilates with her, I thought we were going to have pie and lattes! Now, I realize, we do that that after we take the class!
This year, my Pilates teacher and studio owner, Katie, and I decided to celebrate Pi Day (March 14….3.14) by having Pilates class and Pie and Lattes! In the time it took to do 20 leg circles and the dreaded hundreds, Katie and I planned the party. We invited the Pilates instructors and clients to bring their favorite pie. We also solicited pies from local bakeries. I would serve as a judge and Katie offered a $50.00 gift certificate for a Pilates class for the prize winner.
We ended up with a parade of pies: 2 apples, 2 Hoosier creams, 1 chocolate topped with caramelized bacon, and 1 blueberry goat cheese. The grand prize winner was the apple pie from Locally Grown Gardens (the judge loves the fresh apples and all-lard crust.) Second prize went to the blueberry goat cheese pie from 3 Sisters Café. While the second apple pie, (already a winner at a previous contest) was disqualified because of a conflict of interest, it made the cut for the recipe to be included in this blog!

Pies: A parade of home-made and bakery-made pies to celebrate Pi Day.
- For the crust
- ⅔ cup shortening
- 2 tbsp butter
- 2 cups flour
- 1 teaspoon salt
- ¼ cup water
- For the fillings
- 8 cups apples
- ½ cup sugar
- ⅛ teaspoon salt
- ½ teaspoon cinnamon
- sprinkle of nutmeg
- 4 ½ teaspoons of corn starch
- To make the crust: Cut chilled shortening and butter into flour and salt with a pastry cutter. Then slowly add water and stir with a fork until combine. Separate into two balls and chill before rolling.
- To make the filling: Combine all ingredients in a large bowl.
- Bake at 450 degrees for 10 minutes. Then another 35-45 minutes at 350 until golden.
