On a sunny Florida day, my sister, daughter-in-law, and granddaughter set out from Fort Myers Beach to have lunch at the Bubble Room on Captiva Island. The restaurant is a landmark, noted as much for the ambiance as the food. Walking in from the bright Florida sunshine, a hungry guest must adjust to the sights and sounds of antique toys, train whistles, and the old-fashioned “bubble lights” for which the restaurant is named.
We started our dining adventure with, what else? Bubbly!
During the wait for our food to be served, we sorted through the sensory overload, first admiring the “bubble lights,” then looking under the glass top of our table to view the holiday memorabilia, and finally, scanning toys from the 1930s and 1940s until we found our Hoosier friends, Raggedy Ann, (who is giving Andy the elbow,) flying high in the Bubble Room sky.
Although the restaurant is known for its cakes (and we did indulge ourselves in the best-ever red velvet cake,) we also, of course, ordered a pie. Two pies were on offer from the “Scout,” who was our dessert guide. The first was a key lime pie (we had had enough of those) and the other was a Butterfinger Ice Cream Pie. Our server told us the pie had a cookie crust filled with ice cream with Butterfinger bits mixed in, and we told her to bring it on.
People: Pie servers dressed as Scouts who can guide guests to good dessert choices.

Pies: Butterfinger Ice Cream Pie. Making a Butterfinger Ice cream Pie is a piece of cake! I made mine with Girl Scout cookie crumbs (Tagalogs) for the crust, and crushed Butterfinger Bites mixed into vanilla ice cream and a few scoops of salted caramel gelato. Voila, bubbles!
- Crust:
- 1½ cups crushed filled cookies such as oreos or Tagalog girl scout cookies
- 6 tablespoons butter, melted
- 1 bag Butterfinger bites or 3 butterfinger bars or to taste!
- Filling:
- Vanilla ice cream to fill crust; can add 2 scoops of other flavors such as salted caramel gelato
- Mix melted butter and cookie crumbs and pat into pie pan. Freeze for 30 minutes until firm.
- Fill crust with ice cream (s). Freeze until solid, about 30 minutes.
- Enjoy!
