Neighbors invited me to a Memorial Day cookout with their daughter, son-in-law, and 11-year-old granddaughter, Olivia. I contributed a Key Lime pie for dessert. When Olivia finished the last bite of her pie, she wished there was more. Solution: make another pie!
People: An 11-year-old who wanted more pie.
Places: A kitchen ready to make a pie! The next day, Olivia and I set out to make another pie. I wore my trusty “Art of the Pie” apron for good luck and Olivia chose one that matched her outfit. Next, Olivia read the recipe while we checked that we had all of the ingredients. We both like the crust made with graham cracker crumbs, turbinado sugar, and butter.
Olivia mixed the ingredients and carefully shaped the crust in a pie pan that she could take home with her.
While the crust firmed up in the freezer, we made the filling. The filling is, of course, made with key lime juice. We like the tartness of the bottled juice made from key limes and learned about the difference between key limes and the typical persian limes available in our grocery stores. The filling also included egg yolks and Olivia quickly mastered the skill of separating the yolks from the whites…no mistakes for her!
Pies: A Key Lime Pie. Fifteen minutes in the oven and the pie was almost ready to eat. Olivia decided to decorate the pie with American flags to honor the spirit of Memorial Day and then we let it cool for a bit. Olivia likes to make this pie because it is fun, quick, and tasty!
